From alpha to omega

The harvest season starts very early, around the beginning of October. We pay particular attention to the harvest to ensure that both the trees and olives are treated with care. Our sacks containing to harvested olives reach the oil mill within 12 hours. The juice from the green ripe olives is extracted at a temperature below 27°C, giving us an olive oil with distinct aromas and flavors, rich in polyphenols and other healthy nutrients.

The fresh olive oil is stored in stainless steel tanks that are continuously supplied with nitrogen gas. We carry out regular tests to ensure that our olive oil is always of the highest quality.
